The Peanut Brittle recipe is a candy that is usually very hard and brittle, thus the name. It consists of hard sugar candy embedded with nuts such as almonds or pecans, as well as legumes such as peanuts. A sugar and water mixture is heated to the hard crack stage, around 300 degrees. Peanuts (or a nut of choice) are then added to the sugar mixture. Various spices, leavening agents or peanut butter are then added depending upon the recipe. The hot candy is poured onto a flat surface to cool. After the peanut brittle is cooled it is broken into pieces.
There is a large variety of peanut candy and nut candy recipes. There are so many varieties of nuts that can be mixed with so many different ingredients that you could make a different nut candy every week without duplication for a very, very long time.
