Irish Potato Candy Recipe
1 sm Irish potato
1 tsp butter
1 tsp vanilla extract
3/4 can coconut
1 lb confectioners sugar
2 1 oz squares semi-sweet chocolate
1 square parffin
1. Boil potato. Peel and mash fine with butter and vanilla. Add coconut. Add confectioners sugar until it forms a soft dough (about 1 lb sugar).
2. Roll into balls and let stand.
3. Melt together chocolate and paraffin in double boiler.
4. Dip balls into chocolate using toothpicks. Place on wax paper to cool.
Tips: May substitute 2 Tbsp peanut butter for the coconut if you prefer.
May use semi-sweet chocolate chips in place of squares of chocolate.
