Hot Pepper Candy

This Hot Pepper Candy is that special homemade candy for grown-up tastes. This hard candy recipe has cayenne pepper to give it a little extra kick!



Hot Pepper Candy

Ingredients:

1-1/4 cup water

2 cups sugar

3/4 cup light corn syrup

1 Tbsp butter

1 tsp cayenne pepper


Directions:

1. Bring ingredients to a boil in a heavy pan. (To be sure all the sugar crystals are dissolved you can wash the sides of the pan down with a wide pastry brush.) Do not stir mixture after it is boiling.

2. Cook to the hard crack stage (300 degrees). Immediately remove from heat and let cool to 160 degrees.

3. Pour mixture into lightly oiled sheet pan, but do not scrape the bottom of the pot!

4. You can cut the candy with scissors before it is too hard, or you can let it harden and crack it into pieces.

5. The candy will become sticky if not individually wrapped. Enjoy!
