Praline candy,
a favorite homemade candy, is a wonderful confection made from sugar, milk and nuts. It is believed that the Praline originated in France at the Chateau of Vaux-le-Vicomte by the the chef who cooked for the 17th century sugar industrialist Marshal du Plessis-Praslin. The name Praline being taken from the name Praslin. Original Pralines were made with almonds coated in a caramalized sugar.
The recipe came to Louisiana by French settlers. During the 19th century, with pecan trees being so plentiful in Louisiana, cooks naturally began to substitute pecans for the almonds and then added cream to thicken the confection, and the Praline as we know it today was born.
