Pumpkin Walnut Fudge
Ingredients4 cups granulated sugar 1 cup milk 3 tablespoons light corn syrup 1 cup pumpkin puree 1/8 teaspoon salt 3 tablespoons unsalted butter, cut in bits 1 teaspoon vanilla extract 2 cups chopped walnuts, toasted Directions
1. Line a 9-inch square baking pan with lightly buttered waxed paper or aluminum foil. Set aside. 2. In a 4 quart heavy saucepan combine sugar, milk, corn syrup, pumpkin and salt. Cook the mixture over medium heat, stirring, until sugar dissolves. Cook, without stirring, until a candy thermometer registers 238 degrees F. 3. Remove the pan from heat. Add butter. Do not stir. Let sit, undisturbed until the pan can be comfortably handled (about 110 degrees F). 4. Add vanilla and walnuts. Beat mixture with a wooden spoon until it begins to lose its gloss. Spread in prepared pan. Cool completely at room temperature. 5. Invert pan, peel off paper and cut into 1-inch squares. Store covered, in cool place. Makes about 2 1/2 pounds candy. Tips: Try pouring the mixture into
candy molds
for an extra special touch.

Halloween Candy Monsters
Ingredients2 cups semi-sweet chocolate chips 2 cups peanut butter chips 1 cup peanuts, coarsely chopped 2 cups chow mein noodles, plus additional for decorating Miniature M&Ms, or cinnamon red hots for decorating Directions
1. Prepare a baking sheet by lining it with aluminum foil. 2. Combine the semi-sweet and peanut butter chips in a large microwave-safe bowl. Microwave the chips until melted, stirring after every minute. 3. Add 2 cups of chow mein noodles and the chopped peanuts, stirring until all the pieces are well-coated and evenly mixed. 4. Using a teaspoon, drop small dollops of candy on the prepared baking sheet. 5. Use additional chow mein noodles and the miniature M&Ms (or red hot candies) to decorate your monsters. Try giving them antennae or hair and arms and legs, and be sure to use their natural “body shape” to give them monster personalities. 6. Place the candies in the refrigerator to set the chocolate for at least 20 minutes. Your monsters can be stored in an airtight container in the refrigerator for 3-4 days.

Candied Apples
Ingredients 12 red delicious apples 12 wooden skewers 4 ½ cups sugar 3/4 cup light corn syrup 1 tsp red food coloring 1 ½ cups water 1 cup chopped peanuts Directions:
1. Grease a large cookie sheet and set aside. 2. Wash and dry apples. Insert a stick through stem, leaving about two inches sticking out. 3. In saucepan over medium heat, combine sugar, corn syrup, food coloring and water. Cook, stirring constantly, until ingredients are dissolved and liquid boils. Set a candy thermometer in mixture and continue cooking, without stirring until temperature reaches 290 degrees, about 20 minutes. 4. Meanwhile place chopped peanuts in a bowl. 5. Remove syrup from heat and, working quickly, dip the apples one at a time to coat evenly. As you dip each apple, roll in peanuts to coat then place on prepared cookie sheet. 6. Let apples cool for at least an hour.
