Caramel Recipes and Toffee Recipes



Caramel recipes make delicious caramel candy that is usually a soft, chewy, dense candy. It is basically made by boiling a combination of milk, sugar and butter to a firm-ball stage at about 250 degrees. Caramel is used in a wide variety of candies Caramel Candy such as caramel candy, caramel apples, and caramel candies made with nuts such as pralines. Caramel is also used as a filling in candies and chocolates.


Caramel apples are whole apples which are dipped in hot caramel Caramel Apple and are usually served on a stick. After being dipped in the hot caramel, the apples may be covered in chocolate or rolled in nuts or other candies and then cooled.

Toffee recipes are candies made by boiling sugar or molasses with butter (and occasionally flour). The sugar mixture is heated to the hard crack stage around 300 degrees to 310 degrees. Toffee may also have nuts added during preparation.

Toffee making involves boiling the ingredients until the mixture Almond Crunch Toffee this stiff enough to be pulled into a shape which holds and has a glossy appearance. The mixture is then placed in a shallow pan and allowed to cool in the form of a sheet. As with many candies, different combinations of ingredients and different cooking processes and temperatures will result in different textures and levels of hardness from soft to brittle.
